I have an 07's Apex Mtn. I want to run just 2 inside wheels and I have a couple questions.
Is it possible just to mill down the stock axle to accept a 2nd inside wheel?
What size wheels can/should I use? Stock is 7" correct? Can I use 8" and whats the biggest advantage.
FYI I have removed all the small outside wheels and just run ice scratchers all the time now, hyfax seem to be lasting consideribly longer.

You already have external Drivers. So ratcheting would not result.
I know that the Firecats were really tippy w/o external rear wheels.
You can add a second wheel inside. I have seen a kit for that someplace. They give you a couple new spacers to put in alongside a new wheel.
I would stick with 7". 8" is going to pull the track off the rails. But, that is not to say 8" would not work or maybe even work better.
I would bet that dropping to 2 wheels will shorten the track's life. There will be a lot more pressure put on the center band.
