Drill a small hole through the head of the bolt. Drill a couple of small holes in the tunnel next to the hole where the bolt goes through. Safety wire the bolt aircraft-style using the holes in the tunnel. If you want to remove the bolt simply cut the wire. We used to do this all the time with tunnel bolts in our glory days of cross country racing. So did a lot of others.
On an experimental aircraft that experienced bolts coming loose, they used something called "Belleville Washers" to remedy. Might be applicable to the EZ Ryde suspension?
