Correct me if I am wrong but thats A lock nut with A stainless Lock inside the nut the nuts threads do not end. Is it possible you never tightened it enough and it never locked? I believe it'll tighten way further than you realize.

Not sure if you got an answer on where to tap in for oil psi. Theres A big bolt that goes thru the oil cooler/warmer right beside the oil filter you remove that bolt and have it drilled and tapped to accept your oil line/sensor.
