Not sure what 1.75" track you're thinking about using but I know MrSled installed those iGrips in his 1.75" Backcountry track and don't hearing him having any issues with the lugs being thick enough for the screw-in type stud.

I'm wondering if the wooden paint stick is absorbing the taps as you try to hamer the pad into place. Thinking you're on the right track in trying to use old pad or even a quarter (something metal instead of wood) over the new pad and then tap into place.
When I read your post about wanting a beefier front bumper, this post came to mind. Although it's for a Viper, might be worth the check to see if they make one for the Sidewinder as that bumer not only looks nice but would definitely be beefier!
Although I definitely enjoy the EFI, when I saw your post, it reminded of this ad and how close I was to pulling the trigger knowing it just needed exactly what you are doing and yet it sold as a parts sled. :o|
Yes, whatever the manual specifies. I had an air filter kit on my RX-1 that replaced the stock air box with K&N filters and had different main jets and slide springs and with that setup, is when myself and others had the pilot jets turned out 2.5 turns from seated position.
When I disassembled the carbs in my RX-1, removing the jets and pilot screws and such, I always seated them back to their proper turns; some have actually went as far as 2.5 turn, myself included. In my experience, they don't tend to move once set. My guess would be that more than likely, they...
