Ya sounds like an air lock in the MTX cooler. I thought I read there was a different method to bleed that cooler, im not sure what it is tho.
 
If your fan is coming on when the temps rise, the fuse and relays are good. Your machine with the extra heat exchanger has has tons of cooling surfaces. It could be a thermostat, but not likely. It's rare they malfunction. Like the previous comment you must have an air lock in the system preventing the coolant from circulating properly.

I do Not have the extra tunnel cooler and have ridden in very warm temps with no problems. Just don't let it sit and idle in this temps.

My Nytro XTX has a Stage one supercharger on it with the MTX cooler on it. The light never comes on in normal conditions and even limited snow . Seems like you may have a blockage if your fan is working properly..
 
I have the mountaintech IP Vent and have nothing else for cooling and my temps stay fine, unless It idols for very long. vents help big time. since you have the mountain cooler you could also try a different snow flap. weird as it sounds it also plays an effect on the way snow moves thru the tunnel. ive heard people that put the new viper snowflap on their machines have less snow build up on top the tunnel also.
