I installed a mountain throttle cable because of the 2 inch riser I installed (for the record, it's only a smidgen longer than the stock cable).
When I was adjusting the cable I noticed the right two carb throttle plates (butterflys) weren't closing all the way. All 4 should close shut with the throttle closed right? How should I adjust?

What do you mean they're not closing all the way? As in they are getting stuck or their stoppers are holding them more open than the rest?
If they're getting stuck then you need to take them apart and clean them out. If they're not getting stuck, you need to do a vacuum sync (there is a stopper screw between each pair of carbs for adjusting).
Probably you accidentally turned the sync screw when you were adjusting the cable.

No crud in the carbs LB, the stopper must be outta wack. But I know I didn't screw their adjustment up. They must have been this way all along.

Make sure you use a decent vacuum gauge to sync with. Makes a noticeable difference to how it idles.

When you screw something up retrace your steps. I did this and found I knocked a little spring out when I reconnected the new throttle cable
