What would be involved in stretching my XTX to a 153 or 162? Can it be done with the stock tunnel?
I would like to make it as mountain friendly as I can!

I do it with mine. Van amburg makes a extension and all you have to do is extend your rails or put a different suspension in.
I believe hartman also makes a extension

several things to consider when extending. 144 to 153 is one thing and you can MAYBE get by without a tunnel ext - but 162 is another. Gearing is another - the track weight alone, clutching is a major consideration.... will all come into play because it will affect your riding experience from engagement to pull to torque to ..... I dont know what a XTX is stock but it is probably a 22/40. MTX which started at 153 is a 20/40 and the new SE 162 is 18/40. Next is track. If you are going off trail, as I suspect you are going to want a good paddle track, but need to consider the trail time too. Lots of people take a 2.25 Camo track and cut it down to a 2. Seems to be a good mix.
My advise is to take your time with it and take all advise into account. There are a great deal of good people on this forum. So let them help.

Jacobson rollover valve kit
Next year:
Turbo or Blower

I think the 153 would work ok. I guess my issue is would it be easier to make the XTX mountain worthy or make an MTX trail worthy? I could sell my XTX and only have to come up with a few hundred bucks to get into an MTX.

Your not going to like a MTX on the trails, at least not around here and north, its narrower, and will handle worse then the Nytro allready does. I have been told that a 153 will fit in a 144 tunnel with no extension. I am replacing my stock XTX extension with a hartman 121-144 extension, this makes the tunnel about 2.5" longer and should have no issues clearing a 153 2.5 track. The reason I am doing this is because I had to do a little parking lot fix with my tunnel dump exhaust last year wich put to holes in the top of the tunnel, I also dont run the factory taillight and those mounting holes hold ice and look terrible. This will give me a smooth rear tunnel. I plan on getting a new trail sled next year and will be keeping the Nytro, my plans are to buy a complete skid, track, drive shaft, gears, to swap out to run out west when I go, and when I run it around here I can use the stock skid and track. To run a 2.5" on a XTX your going to have to have a 7 or 8 tooth diver and most likely a 3.0 pitch. I figure I might just leave it a 153 after all it will be a back up/western sled anyway. I know a guy that took a XTX with a 2" challenger out west and it did great, not as good as a MTX but held its own. Like said above, you could find a used camo 2.25 or 2.5 and cut it down to 2" for this year.

IFlyEm - I would approach your decision with a question. If you ride 80+% of the time on trails I would get the parts to create a XTX mountain kit. As stopdropanroll touches on - the MTX is ridable for a weekend here or there on the trails but it is not setup for it. I would extend your 144 to a 153 and leave it. With tipped up rails you get both worlds. Just change your track for the trip out West. Ski's are the same way to me. Get a good set that that bridges the gap between what comes on the XTX to what the MTX comes with. Lots to choose from out there. Simmons is coming out with a Gen 3 that we rode last year and Moto really liked it - there are others out there too. The Relocator corrects both sleds - you may want a riser for a mountain kit - Lake Affect makes a nice one, Rox has adjustable, there is also one coming out from North Coast Innovation that i have seen a protype and looks very nice.
IMO - keep the XTX and get the parts to go West. Most of the parts you will end up keeping on it for trails
