Can’t go wrong with thunder, ulmer or dalton all are great upgrades .... Schmidt Bros uses stock fly weights and are a pain to adjust plus you can’t fine tune them as well ... just my .02
There is no reason to take brake apart like that, all you need to do is pull pin holding the pads in take pads out unbolt caliper and slide both out and take rotor out !!!
As most said push piston (both ) in all the way , start up at master , then down at caliper bolt then bleed screw
I found it out teo years ago , had clutch off and tried to start it and wouldn’t , mess around trying to figure out why and got it to start then gave it throttle and stalled and wouldn’t restart , put clutch on and started right up !

These things won’t start sometimes with the clutch off and won’t take throttle, all of what you are doing Steve make sense, I have never look at what the big differences are between viper and a sidewinder, up a turbo on a viper that has about the same HP as the sidewinder and the viper still...
Amsoil is good , I have put gear oil in my viper and took it out , reason for taking it out is as the temp comes up in chain case you could smell the gear oil and didn’t like that , but gear oil will work good to .
I got some and did it to my air box and those alone you won’t tell the difference, call Ulmar and get 3 Velocity Stacks and then you will tell the difference
