Can a metal seal be removed as easily as rubber seal to grease bearing? The new bearing I got this time has that.

No. About all you could do is using a very small grease needle try getting it in.

Crap. That sucks. Maybe I should pull it back off and return for one with rubber seals.

When you need to grease it just pry it off. You will destroy the seal but it can be replaced with a rubber one from one of your idler wheels. I did this years ago and still works great.

Another option is to drill a pin hole in the metal seal for a needle greaser and after you fill it with grease clean it good and put a little spot of rubber silicone on the hole.

X2 - I did this but didn't use the silicone. The hole is small enough that very little of anything gets in or out.
