I have been doing a little research and not coming up with much on what works best for oiling. where have people been getting oil from and returning it with good success? the adapter plate seems like a good idea to get pressurized oil but is there any options to return oil without using a pump?

So you are unable to use gravity to return your oil then. You'll have to look at a pump similar to MCX or Bender.

from what I have been told, I can tap into the side cover by the clutch for an oil return as long as I have a straight section of hose that will gravity feed to that location, anyone done this with a mid mount? it appears with the mid mount setup the angle should be enough for a good gravity feed back to that location.

As long as it has a downward angle from the turbo to the side cover.
If it has a flat section and you climb a long hill it could fill up and not drain properly.
The Garrett Ball Bearing Turbos use the least amount of oil to lubricate the bearings, you can run a 0.035 orfice on the oil feed this make draining a little more friendly than other brands.
Ted.
Like Ted said, it has to be a continuous downward slope for gravity return to work. I have a used MC Xpress oil return pump for sale if you think you'll need one.
