does anyone have any ideas or seen aftermarket products to prevent mud and water from coming through the open area's of the plastic near the knees.

While I am not familar with the 700 FI Grizz.. I know in the past I have used thick sheets of plastic to keep the mud out of the front frame on my dirtbike... I simply made a template with cardboard then used my scroll saw to cut the plastic... it worked Great!
I plan on doing the same on my Grizzly 450 to do my best to keep mud away from areas that it will cake up

Those holes are most likely for cooling.....I doubt they will get you wet.

If you're hitting water holes at 25mph, water coming through a couple holes by your nuts should be the least of your worries. The hip waders you "should" be wearing will keep you dry. If not, that's the only part of your body that would've been dry. The 700 has a problem with excessive heat around the gas tank when it's working a bit and not moving very fast. eg: a long swamp or muskeg crawl. If you block up these holes by your inner thighs, it will probably aggrivate the problem.
