I don't know how you would check them without pulling the exhaust system apart. The gaskets themselves are inside the joint between the headers and the 3-1 pipe.
The way I noticed mine were shot is I had a loud rattle coming from the front of the tunnel. On my sled, once the donuts went, the clamps became loose and this was the source of the rattle.

I'm in the process of doing mine right now and couldn't tell they were worn without pulling it apart other than the sound of the exhaust leaking from the tunnel area when I was running it on the stand. Even once I got the clamps off it was hard to tell until I spun one around with my fingers and the bottom of the donut was starting to burn out. I believe they won't spin around the flex pipe very easily if they are in good condition either.
