I have done some searching on this but have a few questions. I am installing Carillo rods (needed rods anyways) and JE 10.1 pistons, should I use 1 or 2 head gaskets? My goal is about 15-16psi and I will running at mostly 5-8000ft but do not want to run race gas if I dont have too, I dont mind mixing though. Great site, have learned lots and looking forward to my project. Thanx for any info guys.

What turbo are you using? If you want to run that kind of boost on pump I would run 2. Even then I would run a couple gal of race fuel. No reason to break a nice new motor for running poor fuel. I don't know about your area but we can get race fuel for $6-7 a gallon. With pump now at $4.20 for premium that is only a extra $10 a ride for using race fuel.

What zross says.
I run 10:1 Wisecos and 2 stacked head gaskets at 16 lbs on 98 octane RON pumpgas equals 93 octane premium pump in the US. I ride from sealevel 0 to 3000 ft. If you climb mountains at WOT heatsoaking your engine I would suggest mixing in some racefuel to keep your engine safe.
Even if I ride at sealevel I do not heatsoak my engine like you mountain guys do so I get away running on 98 octnane pump for a mile WOT on the sea ice.

Have you got the pistons yet? If not go with the 9 to 1 and 1 headgasket. Thats what I have in my setup and it only gets rode in BC
