Carver has some really good performing valving mods for the Ohlins shock that's in your LTX GT mono skid. He usually recommends sticking with a lighter rate stock spring with his valving specs. I'm currently running his set up using a 4.9 spring on a 136" mono skid with quite a noticeable improvement in ride quality over the stock set up. I'm a wee bit lighter rider at 150 lbs.
With his valving specs and your weight, I'd start with the 6.1 spring that you currently have, and see how you like the ride before going to a higher rate spring.

Go Big Boy!!!
I go about 325 all geared up, so I went for the Big Boy spring straight from the dealer when I bought my 2007 Attak GT, and I have not regretted it one bit. Sure you could probably get by with the stock spring, but if you plan on packing any additional gear for any long trips or have to double up when the old lady decides to take that one or two rides a year you won't regret the upgrade.

The spring holds you up, the shock takes over from there. You need to set the sled up so the ride height is within specs to start. (I would endorse setting it up within specs - but near the very top of the range provided.) Then you send it out to be revalved. Switching springs AFTER a revalve pretty much blows the custom valving. The rebound damping will have changed for sure - especially going with a stiffer spring.
Carver's recomendation is assuming this logic. If you decide to go with heavier than needed springs, I'm sure he'll compensate, but there will be no doubt about the results. The ride you get out of the deal will be stiffer than necessary.... FWIW
