I think the problem is when you hit the water the steam from the engine goes up and tries to escape but there is no where for it to go i have the same problem with my 450 Grizzly the place where the steam goes is into the air intake tube under the gas tank and it chokes the engine out when you give it gas(RIGHT???) you should try to remove the seat and go through some water and see if it clears it up, it lets the steam escape.

I agree, it's probably the steam getting into your intake tube.

Steam, enter the water at a slower pace .... I have had mine in to just under the fenders and runs perfect but if I hit the water fast it steams and chokes of the air intake under the tank cover...

Try putting your airhorn(factory snorkle) between your gas tank cover and your seat and see what happens, just don't forget it's there when it is time to wash! Also consider Twin-Air filter or UNI plus a power tip, the 2 allow a lot more air in and out which in turn dilutes the steam and lessens or completely eliminates the steam issue. Good luck.............Irv
