If the carb screws are not already stripped out, try to find a JIS (Japanese Industry Standard) screwdriver instead of using a US Phillips. They may look the same but they're not. The Phillips is designed to "cam out" to prevent over-tightening of the screw while the JIS is not designed to cam out and will actually twist the head off the screw before it slips if used correctly
Regarding re-priming the carbs, I remove one the two fuel lines that feed the fuel rail and insert a small funnel a pour the gas in with a small measuring cup until the carbs are full. Hook up the fuel line and turn the key. It always fires right up

Interesting... Doing a little research, it looks like the JIS screwdrivers are fully compatible and actually better than a phillips #2 screwdriver, even for non-JIS screwheads. Going to have to find a set of those now!
