how big of a bar riser can I put on my 05 rx-1 before I need new cables?

Two inches is about it, I have an MPI one and a half incher that works fine.

Or consider getting a good sized riser like Pimpedrsrage has. That riser makes the sled look easy to ride on bumpy days. But you will need to extend those cables.

2 inch. Otherwise you need longer cables. You can reroute one or two. Throttle cable just buy the mountain cables. You'll be fine then and they aren't that expensive.
