I have my buddy's 07 apex gt apart to replace a y pipe and the silencer. Do I push him to buy the copper dounut gaskets or not ? Are they the end all be all or do I just grind down the clamps a little and its good?

The copper will last and seal better. They will "ping" when you shut it off much louder then stock but its worth it if they stay sealed and last 5 times longer.
