What are the pros and cons of removing the coupler blocks?

Pros: No need to worry about poor head lights, they'll be pointed at the sky. Carbides last longer as they never touch the ground, you can keep stock skis for the same reason. Lighter steering, no resistance.
Cons: Can't steer whenever on the throttle, might wear out some suspension parts by over-traveling. Current shock calibrations are out the window. Constant ski lift, you'll be "That Guy" doing wheelies everywhere.

I don't believe you can run the rear skid without the couple blocks. They prevent the rear arm from contacting the rear idler wheels on compression.
You can run Polaris rear blocks in place of the stock units if you want a little bit of adjustability.

You can run without them. I have and it comes close but never touches the wheels. LJ 452 is right, it just wants to wheelie, especially with a passenger. javascript:emoticon('
