Go for 21-40, with reverse no problem, i dont think you can change the lower gear with reverse. Anyway, 21-40 is the lower you can go with this chain. And for me, it's perfect, lot of powerline and forest riding.
I never, never rode that fast with my mountain, the fastest i seen is 165 km/h with 21-40 and 160 with 23-40. I was too loaded at 23-40.

Don't forget I am running a 1.25" ripsaw to get 180km/hr (dream meter speed). Also, the trail was solid/hard pack and is was about 7am so the temp was nice and cool. I always find the most top end in late March/April because conditions seem to be just right.
I will buy a 21 top gear to interchange and put the 23 in for spring.

Try the gearing that you have already since your track is 1.25" instead of 2". Going to 2" grabs alot more snow so you might be fine.
