I went with the rivnut solution but really the other one with the line attached works very good as well, a few zip ties and it's secure no big deal.

Absolutely no issue with rivnuts and the plastic panels..... Use stainless steel components for a rust free application..... Just use the appropriate size SS washer.... Can you not still incorporate the panel removal with the belly pan fastening points?
The belly pan skid plate is bolted to the plastics in a bunch of different areas - I was actually considering installing rivnuts to make the removal of that piece so much easier as well.
