Wondering if anyone has noticed an increase in fuel mileage as claimed for to lower trail rpm. I'm currently getting around 14-15mpg and would love to increase it a bit for longer range. With the smaller tank on the 2011 the further I can squeeze from a tank the better

14-15 mpg is pretty good. I doubt that you can do much better than that with a "performance" clutch kit. Unless you start tuning it specifically for mileage. Then performance will likely suffer.
I don't know what the fuel mapping looks like on the 2nd gen Apex's but on the first gen the low speed mapping is very rich. I saw a modest improvement in mileage by leaning it out with my pc3.

But really, the best way to improvement mileage is by restraining your right thumb.
Conditions play into mileage as well.

That mileage is with multiple full throttle pulls and fast trail riding, usually 50-60 mph consistently. Maybe I focus on making it roll better, DuPont slides etc
