As I ride quite a lot two-up together with my girlfriend, I need firmer rear shock for the skid. The stock shock is buttom-ing out too often
Any suggestions anyone? Have looked for Öhlins but I haven't found one that fits the Mountain skid

I would see if you can get specs for new Nytro MTX air shock. In the pictures that skid looks the same as yours without the springs. Air shocks tend not to bottom as harsh as springs. Just toss your springs if the specs are the same.
It sounds like you need stiffer springs to support the weight ,not a stiffer shock.

Where can I get stiffer springs?? I have already the springs on max stifness.

One question though... when you stiffen up the spring, doesn't that make the rebound harder/faster, as I assume these shocks doesn't have a rebound adjustment..? And all you get with stiffer spring is a very "jumpy" back end?
With a better shock you get a firmer damping and a plusher ride?
I'm not a suspension specialist, so just wondering...?

No you don't get a bouncy ride with the correct spring and right ride height.You get a moother riding sled all around.
Right now with your sled saging all your low speed shock travel is gone so your riding in the stiffer part of the shock so the small bumps you hit it jars you rather then soak them up.
