I own a stock 2018 Sr Viper RTX 129. I recently purchased a Thunder heavy hitter clutch kit, they set the weights to my instructions running a stock 8JP belt. My replacement belt is a Ultimar XS825. I any one running with the Ultimax belt? How is the performance and how combination of weights were used?

Both belts will run different RPM's. The worst thing to happen would be changing some weight around on your heavy hitter fly weights. I believe the Ultimax will run lower RPM's but I'm not 100% sure, as GR8BBQ said the boys at Thunder will steer you in the right direction.
