Found a Apex i like but has a 162 Ez ride skid and 2.5" track under her. Could i cut the lugs down and run her on the trails or no way? I would think it might rock? Great for lake racing 0-120MPH. Good for the bumps??? Will it turn???

The mountain sleds are geared and clutched way different, the skid is mounted further back, the track is all wrong.
It won't turn like a flatland sled, it won't handle moguled out trails the same way.
If the "lake" you are referring to is covered in several feet of powder and tilted 45 degrees vertical up a mountain, it will be the perfect sled for you.

Hey skydog, I am actually very seriously taking a day off and converting my 121 to a 162" with a maverick I bought cheap and cutting the lugs down to a 1.25" and running 1.5" studs. For me it would be using the Zx2 in a 151 conversion and a 5.5" set back so the approach angle would be awesome and it should keep the hyfax ok with the shorter lug. The maverick track cut down actually looks to be the perfect track for trail/lake running and still plenty of lug for the ditchbanging we do around here and off trail oppotunities. It would be my version of a cross over LOL.
The EZ ryde skid you have looks to be beefy enough to take the abuse us loley flatlanders give them. I say go for it! Pro116 did it and liked it, I may do it and if you do it we got 3 dudes that can give different opinions.

The 2.5" track you mentioned is either going to be a Power Claw or Challenger extreme, I would sell the track not cut it down, they are worth $$$.
You can buy a 162" Maverick for next to nothing, that is a good track to cut down.

Get it for sure! I run an MPI 162" Apex 90% trail machine and it works great. My only issues are lugs ripping off the stock track but you won't have this issue if you are cutting the track down down.
The handling is good and your sled will hook up so good with the longer track. Have fun...
