Check out where my skis are attached in this picture. Would I be able to move them to the outside one notch for a bit wider stance? Any downside?

Yes move to outside for stability. I did with no ill effects, however I don't put on a lot of miles in a season.
 
It's a standard mod on most Yamaha sleds. Haven't heard of or seen any ill effects except on the trailer if width is limited.
 
No but it's very easy. Remove bolt, move spacer to the inside, re-install bolt.
 
Add weight to the skis, lift the skid in the front
I'm using a Phazer MTX narrow front end together with FOX shocks, have also used the stock front end together with FOX and the skis at max stance.
Not a big difference compared to the narrow setup. Sway bar removed (not possible with weak front end shocks/springs)
The MP is really unstable when the skid is carrying too much weight in the front instead of the front suspension
