After installing the front sport bumper and seeing how thin the front skid plate was I decided to fab up a thicker aluminum plates to add protection, the front skid plate comes off with 5 screws, no problem, but when I tried to remove the engine access skid plate the screws seem to loosen but never came out, so I tried another screw but same result, my question is there any special trick to remove the access plate?

I had the access cover off just to have a peek a couple weeks ago. The torx bolts had blue loctite on them, otherwise had no problems taking them out. Just make sure you have the exact size bit and you should be ok. They did turn out kinda hard.
fasteners
were the screws machine type threads or were they metal threaded into clips? As I mentioned that I made several turns on them but they seemed like what every they were screwed into was turning too, so the reason for asking was to know whether this was the case with the screw clips turning.

Yes, they do go into metal clips. The only way the clip could turn would be if it was broke. Jeez, that would suck. Then you would have to get in there from the top with a vise grip.
