My 7000 El Tigre has never had the issues you talk about, mine is a little different. After filling up I can literally ride for 2 hrs. and the gauge still shows full, then once it moves it jumps to 1/2.
After that it moves in small increments like it should.
My 2018 Sidewinder is doing the exact same thing.

You are not alone......Anxious to hear your update. I have the same problem with a 14 XTX and a friend also has the same problem with a 15 XTX. You can fill er up, will show empty, then the whole fuel bar starts flashing and then eventually, on mine anyway, the whole fuel gauge can't be seen now....all started for me on a late night run down a trail when the low fuel light came on yet I knew I had at least a half tank of fuel.....guys wondered why I have a Mountain Addiction tank on my tunnel....now they know!
I heard it may just need a relay replacement?
My 2016 rtx is doing this now.... Replaced the sending unit but still all over the map and the gauge disappeared right off the cluster. Had you found what the issue was on yours? You are not alone......Anxious to hear your update. I have the same problem with a 14 XTX and a friend also has the same problem with a 15 XTX. Pics were very helpful, thanks for posting. Pulled my sending unit out and it was uncoupled but wires still connected. Reassembled with Ty wrap. All is well again.Similar experience to ViperBill, except the wires broke off the sender unit also...when I removed the unit all I had was the mountng plate (top piece); the float and the sending unit and the wires were somewhere in the fuel tank...took about an hour to fish it out. But, re soldered the wires, put a couple zip ties on the sending unit and now it works...great!. Nothing like getting 1 year out of a fuel sending unit...pos.
