any ideas to keep skid plate fastened up tight?

I have a ton of experience with nutserts from work.
They dont hold up well to repeated assembly/disassembly.
A trick i use on them when installing is to use red loctite.
I drill the hole for the nutsert.
I coat the hole with loctite primer. I then coat the outside body of the nutsert in primer.
I apply red loctite to the body of the nutsert then using the proper installation tool i install the nutsert.
Allow to dry for 24 hours then assemble.
Primer is needed because loctite will not bond to aluminum properly.
Also i suggest you use red liquid loctite not that paste #*$&@. Liquid will run and fill gaps. That paste just does not get into the voids.

If this does not resolve your issue you can buy nut plates. Rivet them into the belly pan anywhere you want. Drill new holes in your skidplate to attach.
Google nut plates and see what i am talking about.
Good luck

I'm not googling "nut plates" on my work computer!
