How many miles do you have and what temperatures are you riding in?
You can also select a digital temperature readout to show in the temperature bar. Check the manual but I believe you activate by holding two left buttons until number appears.
The fan for the radiator activates at 195. That should give you an indication of your engine temp.
If this is your first 4 stroke be aware that every 4stroke owner I know do not sit and idle their sleds as they talk, etc.
This motor does take time to break in, but for that break in you get a motor that will give you an honest 100,000+ miles with minimal maintenance.
Viper owners report felt HP increases at about 50, 150, 450 and then about 1500 miles. I can report that I have also felt these power bumps as the engine and sled break-in. Enjoy the ride, don't idle for long periods, and smile as your two stroke buddy's are rebuilding up to 2 engines before your first valve adjustment is due at 25,000 miles.
If that does not relieve some of your anxiety, high resale value should.

This is my third 4 stroke in 5 years so I learned on the first not to let idle but temps between 180 to 210 seem really high for breakin haven't been above 6000rpm yet and only have 25 miles on but usually dont have trouble overheating with apex or phazer think im driving it too soft to really get snow up around. always nervous about breakin and then ride it to break it. also oil light comes on when shutting sled off is that normal?

To properly seat the rings the engine needs full load, full rpm and deceleration cycles at short intervals of about 1/4 mile. This should be done in the first few miles after it is properly warmed up.

Yamaha engineering department spent thousands of man hours designing, building and testing this engine. I think they know how it should be broken in. I can say from my experience the better you break it in the better power it will make, you wouldn't do serious damage with the (I know better than Yamaha break in) you will just be that length or two slower in the race with your buddy.
As far as temperature my wife's has always run in the 72 to 76 deg. C range until you let it idle, then it then its up to 93-95 real fast.
