A couple of times my Viper has run around 800 RPMs. and will die. I turn off the key all the way and restart and it is fine. A couple of times the oil light has come on. The first time it happened I had gone through some deep powder. Has anyone else had this happen?

Yes it's happened to others, including me.

As my 2014 Cat does it also (low idle not oil light) I suspect ECU gremlins and am not too worried about it.
Oddly mine waited till 2400mi to do the low idle thing.Twice within a hr. Had to shut it off and restart both times. Was about 140mi from starting point so not to reassuring. Only thing I can think of was it was around 34deg F that day. Warmest day riding yet. Nothing else unordinary. I was advised by dealer to tighten my throttle freeplay.

I already authored a thread on this. Seems to be common but no need for concern:

Mine did it at about 200 miles and has not done it since. Plenty of speculation as to why but wondering if from the factory there may be air in fuel rails or something that needs to be worked out??

Mine did this as well, contacted my Yamaha dealer and they reported issue to Yamaha Head office:

My dealer response/Yamaha head office:
They have not had any reports of any issues as of yet, although it is most likely that because you were on a slope the oil sensor was unable to get an accurate reading and went into safe mode. Then once the sled was on a flat surface again, the sensor picked up proper readings and allowed you to restart and got out of safe mode.
I have forwarded your serial number onto head office, and they have logged it in their system in case something comes of it.
Once everyone actually gets out and riding, we may get more information from them, but as of right now they don’t have a single recorded case at head office.

Alloy mine did it when I hit the reverse button on level ground and would not clear until I cycled the key.
