This plate does nothing to protect the Chain Case, like the OEM rear plate on the vipers correct?

No it's all for the heat exchanger and oil filter... If your looking for chaincase protection I would look at the Racewerx protectors

This plate takes the place of the thin factory plates on the underside. You remove them and then attach the skid plate with 4 bolts. Still allow for quick and easy oil changes.

Does the skid plate have to be removed for an oil change or is there an access door for oil changes ?
